Back in July of 2019 we foraged over 120# of wild sumac growing in the surrounding area. The base beer is a very simple grain bill of Pilsner and Chit malts. We loaded the kettle with sumac at whirlpool and then stuffed the hopback with even more. We fermented this with one of our favorite clean and classic saison yeast strains. After primary fermentation we moved the beer over to one of our 400l oak puncheons to finish out with our house mixed culture for an additional 6 months prior to packaging.
We get delicate notes of rose hip, a medley of berries and fresh cut hay.

Blended mixed culture bier. Matured in oak barrels and conditioned on devilwood blossoms (Osmanthus). Bottled January 2020.
